Homemade Pumpkin Ravioli

There is nothing quite like a homemade Italian dinner. With filling pasta and delectable sauces, you and your family can enjoy the comfort offered by Italian cuisine. As the weather changes, you will want to take advantage of the seasonal flavors by making homemade pumpkin ravioli. Follow this simple recipe for a gratifying dinner tonight.

Ingredients for the Filling

  • 2 tablespoons of salted butter
  • 2 cloves of finely chopped garlic
  • 1 15-ounce can of pumpkin puree
  • ¼ teaspoons of Kosher salt
  • ¼ teaspoons of Chili powder

Ingredients for the Ravioli

  • ¼ cup of pine nuts
  • ½ cup of salted butter
  • 36 whole wonton wrappers – This is the key to making this easy pasta dish. No need to break out the pasta machine!
  • 1 egg
  • Black pepper
  • Fresh parmesan
  • Sliced fresh sage leaves

Directions

Give yourself about 20-21 minutes to make this dish. The first thing you will do is create the filling by melting the two tablespoons of butter into the garlic in a skillet for 1-2 minutes on medium heat. Next, you will add the pumpkin puree to the skillet, along with the chili powder and salt. Cook the mixture for about five minutes. Remove from heat and allow to cool.

The next step will be to toast the pine nuts in a small skillet on medium-low heat for 6-8 minutes. Be sure to toss the nuts occasionally while toasting. Remove the pine nuts from the heat and place them onto a small plate. Then using the same skillet used for the pine nuts, you will brown the remaining butter on medium-high heat for 4-6 minutes. Transfer into a heatproof bowl.

You will then assemble the ravioli by laying out 18 wonton wrappers and putting one tablespoon of the pumpkin mixture into the center of each wrapper. Next, beat the egg with a tablespoon of water. With your finger, smear the egg mixture along the edges of a wrapper containing the pumpkin mixture. Then place a fresh wonton wrapper on top, pressing and sealing the mixture in between the two wonton wrappers. Do the same for each remaining pumpkin-topped wonton wrapper. After making the ravioli, you will boil them in water. After cooking each ravioli, you place about four ravioli on a plate and top with the browned butter, toasted pine nuts, pepper, and Parmesan. This dish is now ready to serve!
